How to Soak Grains and Legumes

How to Properly Soak Your Grains and Beans

Soak whole grains, nuts, seeds and legumes in filtered water with a little unpasteurized apple cider vinegar or organic lemon juice for 8 hours or overnight. Pour off the soak water, rinse and cook.  Usually this will reduce the cooking time considerably. 

With steel cut or rolled oats, soak as before, but cook in the soaking water. This makes your morning oatmeal a snap!

For soaked nuts and seeds, spread them on a cookie sheet after draining well, and place in the oven at the lowest temperature until completely dry and crisp. This may take several hours.
