Food Safety at Home

Did you know that the bacteria that cause food poisoning multiply fastest between 40 and 140 degrees fahrenheit? Always keep cold foods cold and cook foods to above 140.

 

Wash Your Hands

Before and after handling and cooking foods, wash your hands. This is one of the simplest ways to avoid contaminating food. Always wash your hands after using the bathroom, changing diapers or touching animals.

 

 

Storing Perishable Foods

Keep cold foods refrigerated until you're ready to cook or serve them. Refrigerate foods as soon as possible after shopping and after meals to slow the growth of bacteria and prevent food poisoning. Your refrigerator should be set below 40. Leftover foods from a meal should not stay out of refrigeration longer than 2 hours.

Cleanliness

Make sure food prep surfaces are clean before you cook. Use one cutting board for raw meat, poultry and seafood, and another for fruits and vegetables to avoid cross contamination. Also use a separate knife for meats and vegetables. To sanitize your cutting boards, hydrogen peroxide works well and is non-toxic. After washing the cutting board in hot, soapy water and rinsing, simply wipe with hydrogen peroxide.

To keep your countertop clean, here is a recipe for a non-toxic antimicrobial surface cleaner.

1 cup vinegar
1 cup water
1/8 tsp (about 8 drops) Tea Tree Oil

Combine ingredients and pour into a spray bottle.

Shopping

When shopping during warmer months, take some ice packs with you and tuck them into the bags to keep foods chilled until you get home.  It’s also wise to separate meats from fruits and vegetables in shopping bags. Put leaky foods like meat in plastic bags. (Reusable shopping bags can harbor bacteria so it’s a good idea to wash them regularly.)

 

Wash fresh fruits and vegetables

With the exception of prewashed baby salad greens and spinach, fresh fruits and vegetables should be washed before consuming or cooking. Organic produce will not have pesticide residues but it’s a good idea to wash it anyway. Simply rinse well under cold running water. Alternately, you can use a commercial or homemade fruit and vegetable wash. Here is a recipe for a homemade fruit and vegetable wash.

1 tablespoon lemon juice
3 tablespoons white vinegar
3 cups water

Combine all ingredients and pour into a spray bottle.

When in doubt, throw it out!

Can't remember when you put those leftovers in the fridge? It's better to toss food you're unsure of than to risk getting sick.

Cooking Meat and other Foods

The best way to ensure that meat is cooked thoroughly is to use a thermometer. Insert it halfway into the thickest part of the meat, away from bone, fat and gristle. Invest in a good quality internal thermometer as this is by far the best way to know for sure when something is cooked thoroughly. It also helps to avoid overcooking food.

Beef, Veal, and Lamb (all cuts)
145 degrees = medium rare
160 degrees = medium
170 degrees = well done


Ground Turkey and Chicken
165 degrees


Pork (all cuts)
160 degrees = medium
170 degrees = well done


Whole Chicken or Turkey
180 degrees = well done


Ground Beef, Veal, & Lamb
160 degrees = well done


Hot Dogs & Other Precooked Meats
165 degrees = well done


Fish
Opaque and flaky = well done

Other foods
Casseroles, soups, stews, etc. should be a minimum of 165 degrees before serving. Use crockpots, chafing dishes, etc. to keep foods warm if they will be out awhile.
