Dinner For Breakfast

We discovered a new and delicious approach to breakfast. Dinner! Well, leftovers from last night's dinner. Dinner leftovers are perfect for breakfast (unless you were planning to save them for lunch) because most of the work is already done. Adding a poached egg to stew or soup is a cinch. Heating up cooked grains and dressing them up to make a savory or sweet porridge is super fast. And this kind of breakfast is filling and will keep you going all the way to lunch. Here are a few ways we enjoyed dinner for breakfast.

Fried Spaghetti with Egg

Toss some butter and garlic in a pan and fry up leftover pasta. Add in parmesan cheese if desired and serve with a poached egg on top. Or crack the egg over the pasta in the pan, add a tablespoon of water to the pan, cover and cook until egg white is opaque. Sprinkle with parsley (if you have the time.)

Tomato Soup with Egg

This is reminiscent of shakshuka, a Middle Eastern dish

Pork Chop That Needs To Be Cooked Before It Spoils with Egg

Leftover Braised Greens with Egg

Beef Soup (but almost any kind will do!) with Egg

Millet Porridge 

Heat up leftover millet with butter or coconut oil, nutritional yeast and Bragg's Liquid Aminos for an awesome breakfast. Or you could make it sweet with maple syrup or honey and fruit & nuts.
