Baking Christmas cookies with friends and family is a fun, time-honored tradition. Here is a great recipe for gluten-free sugar cookies:
Gluten-Free Christmas Cookies
3/4 cup natural cane sugar 4 eggs 1/2 teaspoon vanilla extract 1/4 teaspoon sea salt 1 stick butter, softened 3/4 cup coconut flour Optional: 3 tablespoons natural sprinkles or 2 tablespoons natural cane sugar + 1 teaspoon cinnamon
Preheat oven to 375. In a medium-sized bowl, beat the sugar, eggs, vanilla, salt, and butter together. Add the flour and mix well. Mix together the cinnamon & sugar in a small bowl.
Using a teaspoon or a small scoop, scoop up the dough and form it into walnut-size or smaller balls. Roll dough balls in the cinnamon-sugar mixture or colored sprinkles, if desired. Place on greased cookie sheet and flatten lightly with the palm of your hand. Bake for 12 minutes or until slightly golden.
