Recipe of the Week
Here is a delicious way to use up leftover turkey. Adapted from eatingwell.com, this Southwestern-inspired soup will nicely warm up post-Turkey day.
Turkey Squash Soup
1 tablespoon extra virgin olive oil 1 onion, chopped 1 red pepper, chopped 3 cloves garlic, minced 4 cups chicken broth 1 1/2 pounds butternut squash,peeled, seeded and cut into cubes 2 teaspoons thyme 1 1/2 teaspoons cumin 1 pound cooked turkey, chopped 2 cups corn 2 tablespoons lime juice salt and red pepper flakes to taste
Heat oil in a large pot over medium-high heat. Add onion and pepper; cook, stirring often, about 5 minutes. Add garlic and cook, stirring, for 1 minute more. Add broth, squash, thyme and cumin; cover and bring to a boil. Reduce heat to medium-low and cook until the vegetables are tender, about 15 minutes. Add turkey and corn and cook until heated through, about 5 minutes. Add lime juice and season with salt and red pepper flakes.
