Recipe of the Week
Here is a delicious way to use up leftover turkey. Adapted from eatingwell.com, this Southwestern-inspired soup will nicely warm up post-Turkey day.
Turkey Squash Soup
1 tablespoon extra virgin olive oil 1 onion, chopped 1 red pepper, chopped 3 cloves garlic, minced 4 cups chicken broth 1 1/2 pounds butternut squash, peeled, seeded and cut into cubes 2 teaspoons thyme 1 1/2 teaspoons cumin 1 pound cooked turkey, chopped 2 cups corn 2 tablespoons lime juice salt and red pepper flakes to taste
Heat oil in a large pot over medium-high heat. Add onion and pepper; cook, stirring often, about 5 minutes. Add garlic and cook, stirring, for 1 minute more. Add broth, squash, thyme and cumin; cover and bring to a boil. Reduce heat to medium-low and cook until the vegetables are tender, about 15 minutes. Add turkey and corn and cook until heated through, about 5 minutes. Add lime juice and season with salt and red pepper flakes.
Please sign and send a proxy letter to Cornucopia.org that they will present to the National Organic Standards board meeting at the end of this month. Corporate lobbying has resulted in the use of GMO and chemical-laden ingredients in infant formula labeled as organic and will ask the NOSB to approve them after the fact! Show your opposition by signing and sending your letter today.
